  • 8 oz dry spaghetti Use high-quality spaghetti for better texture.
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced Fresh garlic is recommended for best flavor.
  • 1 teaspoon red pepper flakes Adjust to taste based on preferred spiciness.
  • 14 oz crushed tomatoes Can substitute with blanched and pureed fresh tomatoes.
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt To taste.
  • 1/2 teaspoon dried parsley For garnish.

Preparation

  • Bring a large pot of salted water to boil.
  • Add the spaghetti and cook according to package instructions until al dente. Reserve about 1/4 cup of the pasta water and set the spaghetti aside.

Cooking

  • In a large skillet, heat the olive oil over medium heat.
  • Add the minced garlic and red pepper flakes, sautéing for about one minute until fragrant but not burnt.
  • Pour in the crushed tomatoes, season with oregano and salt, and let simmer for about 10 minutes, stirring occasionally.
  • Add the cooked spaghetti and reserved pasta water to the skillet, tossing to coat well in the sauce.

Serving

  • Plate the spaghetti and sprinkle with dried parsley. Serve with garlic bread or a green salad.
