  • 2 cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup pepper jack cheese, shredded
  • Salt and pepper to taste

Preparation

  • Start by heating the olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic to the hot oil. Sauté for about 3 to 5 minutes until they become soft and fragrant.
  • Add the diced jalapeños, cayenne pepper, and ground cumin into the pot. Stir and cook for an additional 2 minutes.

Cooking

  • Incorporate the chicken breasts, white beans, and chicken broth into the mixture. Stir to combine.
  • Allow the mixture to come to a boil, then reduce the heat and let it simmer for about 20 to 25 minutes.
  • Remove the chicken breasts from the pot, shred the chicken, and return it to the pot.
  • Stir in the shredded pepper jack cheese and mix until melted.
  • Season with salt and pepper to taste.

Serving

  • Garnish the chili with fresh cilantro before serving.
  • Serve with sides like crusty bread or tortillas and consider toppings like sour cream and additional cheese.
