Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt

Wet Ingredients

  • 1 cup cottage cheese
  • 1 large egg beaten
  • 1 tablespoon olive oil

Main Ingredients

  • 1 cup fresh spinach, chopped Fresh spinach preferred over frozen.

Optional Toppings

  • sesame seeds or poppy seeds For topping

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, mix together the flour, baking powder, and salt.
  • Add the chopped spinach and cottage cheese to the bowl and stir until the mixture resembles a crumbly dough.
  • In a separate bowl, beat the egg lightly, then add it to the dough along with the olive oil, mixing until all ingredients are combined into a soft, sticky dough.
  • Turn the dough onto a floured surface and knead gently until smooth, adding more flour if it is too sticky.
  • Divide the dough into equal portions, roll each portion into a ball, and poke a hole in the center to shape it into a bagel.
  • Place the bagels onto a lined baking sheet and optionally sprinkle sesame or poppy seeds on top.

Baking

  • Bake for 20-25 minutes, or until golden brown and sounding hollow when tapped on the bottom.
  • Remove from the oven and let them cool slightly on a wire rack before serving.

Notes

For best flavor, use fresh spinach. Adjust flour as necessary depending on humidity, and avoid over-kneading the dough.
