Ingredients
  

Pasta and Sauce

  • 8 pieces lasagna noodles Cook according to package instructions.
  • 1 tablespoon olive oil Used for sautéing garlic.
  • 2 large cloves garlic, minced Infuses flavor into the filling.
  • 1 14-ounce jar spaghetti sauce Can substitute with any preferred sauce.

Filling

  • 1 package frozen chopped spinach, thawed and drained (10 ounces) Drain thoroughly to avoid sogginess.
  • 1 cup ricotta cheese Provides creaminess to the rolls.
  • 1 cup shredded mozzarella cheese Adds stringy texture.
  • 1 teaspoon salt Enhances flavor.
  • 0.25 cup grated Parmesan cheese Adjust to taste as garnish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large pot, bring lightly salted water to a boil and cook the lasagna noodles for about 8 minutes until tender but firm. Drain and lay flat.
  • In a skillet, heat olive oil over medium heat, add minced garlic and sauté for about 2 minutes until fragrant.
  • In a mixing bowl, combine sautéed garlic, drained spinach, ricotta cheese, shredded mozzarella, and salt. Mix until well combined.

Assembly and Baking

  • Spread about 1/4 cup of the filling mixture along each lasagna noodle and roll gently from one end to the other.
  • Place rolled noodles seam-side down in a baking dish and pour spaghetti sauce evenly over the top.
  • Cover the dish with foil and bake for 30 minutes. Remove foil and bake for an additional 5 minutes to brown the cheese.

Serving

  • Let the roll-ups cool for a few minutes before serving.
  • Garnish with grated Parmesan cheese and fresh herbs like basil or parsley, if desired.

Notes
