Ingredients
  

Main Ingredients

  • 4 cups fresh spinach leaves washed and roughly chopped
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 4 cups vegetable or chicken broth choose according to preference
  • 1 medium potato peeled and diced (optional for creamier texture)
  • 2 tablespoons olive oil or butter
  • to taste salt and pepper

Optional Ingredients

  • 1/4 cup cream or coconut milk for richness
  • a pinch nutmeg adds warmth and depth
  • 1 bay leaf bay leaf optional
  • to taste fresh herbs like thyme or parsley for subtle aromatic notes

Instructions
 

  • Heat olive oil or butter in a large pot over medium heat. Add chopped onions and minced garlic. Stir gently until soft and translucent, about 5 minutes.
  • Add diced potatoes (if using) and pour in the broth. Bring to a boil, then reduce heat and simmer for 15 minutes until potatoes are tender.
  • Stir in the chopped spinach leaves and cook for 5 minutes until wilted.
  • Remove from heat and discard bay leaf if used. Blend the soup using an immersion blender until smooth.
  • Stir in cream or coconut milk if desired. Season with salt, pepper, and nutmeg to taste. Adjust seasoning as needed.
  • Serve warm and enjoy.

Notes

Try swapping potatoes with cauliflower for a low-carb alternative. Experiment with herbs and spices to suit your taste.
