Spinach soup is a simple, nutritious meal you can make quickly at home. Full of healthy greens, it’s perfect any time of year for a light lunch or cozy dinner.
4cupsfresh spinach leaveswashed and roughly chopped

4cupsvegetable or chicken brothchoose according to preference

Instructions
Heat olive oil or butter in a large pot over medium heat. Add chopped onions and minced garlic. Stir gently until soft and translucent, about 5 minutes.
Add diced potatoes (if using) and pour in the broth. Bring to a boil, then reduce heat and simmer for 15 minutes until potatoes are tender.
Stir in the chopped spinach leaves and cook for 5 minutes until wilted.
Remove from heat and discard bay leaf if used. Blend the soup using an immersion blender until smooth.
Stir in cream or coconut milk if desired. Season with salt, pepper, and nutmeg to taste. Adjust seasoning as needed.
