Ingredients
  

For the chicken

  • 4 pieces boneless, skinless chicken breasts Ensure the chicken is thick enough to create pockets
  • 1 tablespoon olive oil For cooking

For the filling

  • 2 cups fresh spinach, chopped You can use pre-washed spinach for convenience
  • 1 cup cream cheese, softened Soften it in the microwave if needed
  • 1/2 cup shredded mozzarella cheese Add more for an extra cheesy filling
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning Adjust to taste
  • to taste salt and pepper Season according to preference

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine spinach, cream cheese, mozzarella, garlic, Italian seasoning, salt, and pepper until well mixed.
  • Carefully cut a pocket into each chicken breast without slicing all the way through.
  • Stuff each chicken breast generously with the spinach filling.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Sear each stuffed chicken breast for about 3-4 minutes on each side until golden brown.
  • Transfer the stuffed chicken breasts to a baking dish and bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
  • Let the chicken rest for a few minutes before serving.
