  • 2 large eggs, beaten

Preparation

  • Preheat your oven to 375°F (190°C).
  • Grease an 8-inch baking dish with butter.
  • In a medium bowl, whisk together the flour, yellow cornmeal, sugar, salt, and baking powder.
  • In a larger bowl, combine melted butter, creamed corn, and fresh corn kernels, stirring well.
  • Add sour cream and beaten eggs to the mixture, mixing until evenly combined.
  • Gradually add the dry ingredients to the corn mixture, stirring gently until well blended.
  • Transfer the batter to the prepared baking dish, spreading it evenly.

Baking

  • Bake in the preheated oven for about 40 to 45 minutes or until golden brown and the center is set.
  • Allow to cool slightly before serving warm.

Notes

Spoon bread can be customized with cheese, vegetables, or spices. Store leftovers covered in the fridge for up to 4 days or freeze for up to 2 months.
