Ingredients
  

Salad Base

  • 4 cups spring mix greens Look for the freshest greens available.
  • 1 cup cherry tomatoes, halved Add more or less based on preference.
  • 1 medium cucumber, sliced Can substitute with radishes for variety.
  • 1/2 medium red onion, thinly sliced Adjust amount based on taste.
  • 1 medium bell pepper, diced
  • 1/2 cup shredded carrots
  • 1/2 cup feta cheese, crumbled Can substitute with goat cheese.
  • 1/4 cup walnuts, chopped Pecans can be used for a different flavor.
  • 1/2 medium avocado, diced Add just before serving to avoid mashing.
  • to taste salt and pepper Adjust seasoning to personal preference.
  • to taste tablespoons olive oil Use extra virgin for best flavor.
  • to taste tablespoons balsamic vinegar Other vinegar options may also be used.

Preparation

  • Wash the spring mix greens thoroughly under cold water. Drain and pat dry with a clean towel or use a salad spinner to remove excess water.
  • In a large salad bowl, combine the spring mix greens with cherry tomatoes, cucumber, red onion, bell pepper, and shredded carrots.
  • Add in the feta cheese and walnuts, then gently toss the salad to mix all the ingredients evenly.
  • Prepare your dressing by drizzling olive oil and balsamic vinegar over the salad. Season with salt and pepper to taste.
  • Toss the salad again, making sure the dressing coats all the ingredients nicely.
  • Just before serving, gently fold in the diced avocado to avoid mashing it.

Notes

For a more substantial meal, add grilled chicken, chickpeas, or quinoa. Offer additional dressing on the side for personalization. Store the components separately for maximum freshness.
