Ingredients
  

Main Ingredients

  • 1.5 pounds beef stew meat Choose quality cuts with some marbling.
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 pounds russet potatoes, peeled and diced Other potatoes can be used but texture may vary.
  • 1 tablespoon all-purpose flour For thickening the soup.
  • 3 cups chicken stock
  • 3/4 cup heavy cream Can be substituted with yogurt for a tangy twist.
  • 1 cup cheddar cheese, grated Pepper jack can be used for a spicier variation.

Preparation

  • Dice the onion, mince the garlic, and peel and dice the russet potatoes.

Cooking

  • Heat oil in a large pot over medium-high heat.
  • Add the beef stew meat and brown it on all sides, then remove and set aside.
  • Sauté the diced onion until soft and translucent, then add minced garlic and cook until fragrant.
  • Stir in the all-purpose flour and let cook for about a minute.
  • Gradually pour in the chicken stock while scraping the bottom of the pot.
  • Return the browned beef and add the diced potatoes, cover and simmer for about 60 minutes.
  • Stir in the heavy cream and grated cheddar cheese until melted and creamy.
  • Taste and adjust seasonings as needed.
  • Ladle the soup into bowls and serve.
