Chicken and Coating

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup all-purpose flour Seasoned with salt and pepper
  • 2 large eggs Beaten
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1/4 cup olive oil
  • to taste Fresh parsley for garnish (optional)

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Prepare three shallow dishes: one for flour seasoned with salt and pepper, one for beaten eggs, and one for the breadcrumb mixture combined with Parmesan, garlic powder, onion powder, and Italian seasoning.
  • Dip each chicken breast in the flour, then the eggs, and finally press into the breadcrumb mixture to coat.

Cooking

  • Heat olive oil in a large skillet over medium heat and cook the breaded chicken for 3-4 minutes on each side until golden brown.
  • Transfer browned chicken to the prepared baking sheet and bake in the oven for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).

Serving

  • Let the chicken rest for a few minutes before serving.
  • Serve garnished with fresh parsley, alongside hearty sides like mashed potatoes or roasted vegetables.
