Ingredients
  

For the cream cheese layer

  • 8 oz cream cheese, softened Ensure it is at room temperature for easy mixing.
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract

For the crumble topping

  • 1 1/2 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup cold butter, cubed Cut into the dry mixture until coarse crumbs form.

For assembling

  • 1 cup fresh strawberries, chopped Use ripe strawberries for the best flavor.

Preparation

  • Preheat the oven to 350°F (175°C) and grease the baking dish.
  • In a large bowl, combine cream cheese, sugar, and vanilla extract. Blend until soft and creamy.

Making the crumble topping

  • In another bowl, mix flour, oats, brown sugar, salt, and baking powder. Cut in the cold butter until the mixture resembles coarse crumbs.

Layering and Baking

  • Spread the cream cheese mixture evenly in the greased baking dish.
  • Sprinkle half of the crumble mixture over the cream cheese layer.
  • Distribute chopped strawberries evenly on top.
  • Finally, sprinkle the remaining crumble over the strawberries.
  • Bake for 30 to 35 minutes until golden brown. Allow to cool completely before slicing.

Notes

Dust with powdered sugar before serving for decoration. These bars can also be served warm or with whipped cream/ice cream.
