  • 2 pieces ripe bananas, mashed Use very ripe bananas for better sweetness.
  • 1 cup rolled oats Ensure they are gluten-free if needed.
  • 1 cup fresh strawberries, chopped Fresh strawberries yield the best results.
  • 1/4 cup honey or maple syrup Adjust according to your sweetness preference.
  • 1/4 cup nut butter (almond or peanut butter) Feel free to use a nut-free seed butter.
  • 1/2 teaspoon cinnamon Can add nutmeg or ginger for variation.
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts or seeds (optional) For added crunch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  • In a large mixing bowl, mash the ripe bananas until smooth.
  • Add the rolled oats, chopped strawberries, honey or maple syrup, nut butter, cinnamon, vanilla extract, and salt to the bowl.
  • Stir everything together until fully combined. If you're adding nuts or seeds, fold them in at this stage.
  • Pour the mixture into the prepared baking pan and spread evenly.

Baking

  • Bake for 25-30 minutes, or until the edges turn golden brown and a toothpick inserted in the center comes out clean.
  • Allow the bars to cool in the pan for a few minutes before lifting them out with the parchment paper and letting them cool completely on a wire rack.
  • Once cooled, cut into squares or bars and serve.

Notes

These bars freeze well, wrapped individually for up to three months. They can be stored at room temperature for 3-4 days or in the fridge for up to a week.
