Strawberry Cake Mix Cookies

- 1 box strawberry cake mix
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup white chocolate chips (optional)
- as needed Powdered sugar for rolling (optional) For a powdered finish
Instructions
Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large bowl, combine the strawberry cake mix, eggs, vegetable oil, and vanilla extract. Mix until all ingredients are well combined and form a thick, sticky dough.
- If you’re adding white chocolate chips, gently fold them into the dough until evenly distributed.
- Using a cookie scoop or your hands, form balls of dough about 1 to 1.5 inches in diameter. If desired, roll the dough balls in powdered sugar for a powdered finish.
Baking
- Place the cookies on the prepared baking sheet, leaving about 2 inches of space between each cookie.
- Bake in the preheated oven for 10-12 minutes or until the bottom starts to turn golden. The tops will look slightly undercooked but will firm up as they cool.
- Remove from the oven and let the cookies sit on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
