Strawberry Cake Mix Cookies
Delightful and easy cookies made from strawberry cake mix, perfect for any occasion.

- 1 box strawberry cake mix
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1 cup chocolate chips or white chocolate chips (optional)
- 1/2 cup powdered sugar (for rolling the cookies)
Instructions
Preparation
- Preheat your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper or silicone baking mats.
- In a large mixing bowl, combine the strawberry cake mix, melted butter, and eggs. Mix until everything is well incorporated and you have a smooth dough.
- If you choose to add chocolate or white chocolate chips, fold them into the dough to distribute evenly.
- Using a cookie scoop or two tablespoons, scoop out portions of the dough and roll them into balls.
- Roll each dough ball in powdered sugar until coated.
- Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
Baking
- Bake for 10 to 12 minutes, or until the edges are set but the center looks slightly undercooked. They will continue cooking once removed from the oven.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
For a tropical twist, add shredded coconut and macadamia nuts. Experiment with different add-ins like chopped nuts or pretzel bits. Store in an airtight container and consider adding a piece of bread to keep them soft.
