Ingredients
  

For the Cookies

  • 1 cup sugar
  • 1/2 cup butter, softened Ensure it's at room temperature.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can be substituted with gluten-free flour.
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh strawberries, chopped Fresh strawberries are recommended for best flavor.

For the Cream Cheese Filling

  • 1 cup cream cheese, softened Ensure it's at room temperature.
  • 1/4 cup powdered sugar

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the sugar and softened butter until smooth and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  • Gradually add the dry mixture to the creamed mixture, mixing until just combined, folding in the chopped strawberries.

Assembly

  • Line baking sheets with parchment paper.
  • Drop spoonfuls of dough onto the prepared sheets, creating a small indentation in the center of each dough ball.
  • In another bowl, beat together the softened cream cheese and powdered sugar until smooth.
  • Fill each indentation with a generous dollop of the cream cheese mixture.

Baking

  • Bake for 12-15 minutes until the edges are light golden brown.
  • Allow to cool on the baking sheets for a few minutes before transferring to a wire rack.

Notes
