  • 2 cups fresh strawberries, hulled and sliced Use ripe strawberries for best flavor.
  • 1 cup cottage cheese, preferably full-fat or low-fat Adds creaminess and protein.
  • 1/2 cup honey or maple syrup Adjust sweetness to taste.
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice Enhances flavor.
  • 1 pinch salt

Instructions
 

Preparation

  • Wash the strawberries thoroughly and remove the green tops. Slice them into smaller pieces for easier blending.
  • In a blender or food processor, combine the sliced strawberries, cottage cheese, honey or maple syrup, vanilla extract, lemon juice, and a pinch of salt.
  • Blend the mixture until it becomes smooth and creamy. Adjust sweetness by adding more honey or maple syrup if desired.
  • Taste the mixture and adjust any flavors to your liking.
  • Pour the mixture into an airtight container, smoothing the top with a spatula.

Freezing

  • Place the container in the freezer for about 4 hours or until it reaches a firm ice cream consistency.
  • After freezing, allow the ice cream to sit at room temperature for a few minutes before scooping for easier serving.

Notes

Use ripe strawberries for the best flavor. If using frozen strawberries, thaw and drain excess moisture before blending. Store in an airtight container in the freezer for 2-3 weeks.
