  • 2 cups cottage cheese Use full-fat for creamier texture.
  • 2 cups fresh strawberries, hulled and sliced Overripe strawberries can affect texture.
  • ½ cup honey (or maple syrup for a vegan option) Adjust sweetness to taste.
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice Adds brightness.
  • 1 pinch salt Enhances flavor.

Optional toppings

  • chocolate chips or crushed nuts For added texture and flavor.

Instructions
 

Preparation

  • In a blender or food processor, combine the cottage cheese, sliced strawberries, honey, vanilla extract, lemon juice, and salt. Blend until smooth or leave some small chunks of strawberry for added texture.
  • Pour the mixture into a large bowl, scraping down the sides of the blender to catch all the goodness.
  • Fold in extra sliced strawberries or any other mix-ins you like.

Churning

  • Transfer the mixture to an ice cream maker. Churn according to your ice cream maker’s instructions until it reaches a soft-serve consistency, usually around 20-25 minutes.

Freezing

  • For a firmer texture, pour the ice cream into an airtight container and freeze for at least 2-4 hours.

Notes
