fresh or frozen strawberry halves

creamy non-dairy milk

unsweetened vegan yogurt (or more non-dairy milk)

grade A maple syrup (plus more to taste)

vanilla extract
Juice of 1/2
small lemon
(about 1 tablespoon)
Pinch
of salt

quick-cooking or rolled oats

chia seeds (or ground flaxseed)

diced strawberries

Instructions
In a high-speed blender, blend strawberries, non-dairy milk, yogurt, maple syrup, vanilla extract, lemon juice, and salt until smooth.
In a large mixing bowl, combine oats and chia seeds. Pour the strawberry milk over the oats and stir in diced strawberries.
Let the mixture sit for at least 5 minutes, then stir again to ensure even consistency.
Transfer to jars or containers, seal, and refrigerate for at least 4 hours or overnight.
Enjoy cold or warm; stir before serving and add toppings as desired.
