Ingredients
  

  • 1 cup fresh or frozen strawberry halves
  • 1 3/4 cups creamy non-dairy milk
  • 1/4 cup unsweetened vegan yogurt (or more non-dairy milk)
  • 2 tablespoons grade A maple syrup (plus more to taste)
  • 1 teaspoon vanilla extract
  • Juice of 1/2 small lemon (about 1 tablespoon)
  • Pinch of salt
  • 2 cups quick-cooking or rolled oats
  • 2 tablespoons chia seeds (or ground flaxseed)
  • 3/4 cup diced strawberries
  • Topping suggestions nut butter, hemp hearts, almonds, or any favorites!

Instructions
 

  • In a high-speed blender, blend strawberries, non-dairy milk, yogurt, maple syrup, vanilla extract, lemon juice, and salt until smooth.
  • In a large mixing bowl, combine oats and chia seeds. Pour the strawberry milk over the oats and stir in diced strawberries.
  • Let the mixture sit for at least 5 minutes, then stir again to ensure even consistency.
  • Transfer to jars or containers, seal, and refrigerate for at least 4 hours or overnight.
  • Enjoy cold or warm; stir before serving and add toppings as desired.
