Strawberry Shortcake Overnight Oats

A delicious breakfast that combines the flavors of strawberry shortcake with the convenience of overnight oats.

Ingredients
  

  • 12 strawberries (fresh or frozen)
  • 2 cups rolled oats
  • 1.5 cups milk (any kind)
  • 0.5 cups Greek or plain yogurt
  • 1 Tbsp strawberry jam
  • 1/4 tsp vanilla extract
  • Optional toppings (chopped strawberries, desiccated coconut)

Instructions
 

  • Chop the strawberries into small pieces. If using frozen strawberries, defrost them quickly in boiling water for about two minutes, then chop.
  • In a mixing bowl, combine the chopped strawberries, rolled oats, milk, yogurt, strawberry jam, and vanilla extract.
  • Stir all ingredients thoroughly until the oats are well coated and flavors are blended.
  • Cover the bowl with a lid or plastic wrap and refrigerate for at least one hour, or preferably overnight.
  • When ready to serve, remove from the fridge. Enjoy cold or warm in the microwave for 30-60 seconds. Add toppings as desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3-5 days.
