  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup fresh strawberries, chopped Use fresh strawberries for the best flavor.

Optional Decoration

  • 0.5 cup powdered sugar For optional decoration

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.
  • Add the egg and vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Gently fold in the chopped strawberries, being careful not to overmix.

Baking

  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Serving

  • If desired, sprinkle powdered sugar over the cooled cookies for an extra touch of sweetness.
