Ingredients

  • 2 cups fresh strawberries, hulled and sliced Make sure to use ripe strawberries for best flavor.
  • 1 cup plain Greek yogurt Use low-fat or non-dairy yogurt for a healthier option.
  • 1/2 cup honey or maple syrup Adjust sweetness level to your liking.
  • 1 teaspoon vanilla extract For added flavor.
  • 1/2 cup milk (dairy or non-dairy) Choose your preferred type of milk.

Optional Garnish

  • to taste chopped mint For garnish.

Instructions
 

Preparation

  • Hull and slice the strawberries, then place them in a blender or food processor.
  • Blend the strawberries until smooth, or to your desired consistency.
  • In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and milk. Whisk until smooth.
  • Gently fold the pureed strawberries into the yogurt mixture.
  • Pour the mixture into popsicle molds. If desired, add reserved strawberry puree on top for a swirled effect.
  • Insert sticks into the molds and freeze for at least 4 to 6 hours.

Serving

  • Remove popsicles from molds by running warm water over the outside for a few seconds.
  • Garnish with fresh mint or additional strawberries and serve on a colorful platter.

Notes

For best results, avoid overfilling the molds. Store in the freezer wrapped individually for up to two months.
