Ingredients
  

Main ingredients

  • 2 cups cooked chicken, shredded or diced May use rotisserie chicken for convenience.
  • 1 cup corn kernels (fresh or frozen) If frozen, thaw under warm water.
  • 1 cup cucumber, diced Add just before serving to maintain crispness.
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped

Creamy dressing

  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a lighter version.
  • 1/4 cup sour cream Can substitute with Greek yogurt for a lighter version.
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder Adjust to taste for spice.
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Garnish

  • Fresh cilantro for garnish Add before serving.

Instructions
 

Preparation

  • If using fresh corn, cook it first. If using frozen, thaw it by running under warm water, then drain well and set aside.
  • In a large mixing bowl, combine the cooked chicken, corn, cucumber, red bell pepper, and red onion.
  • In a smaller bowl, mix together the mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper until smooth and fully combined.
  • Pour the dressing over the chicken mixture and gently toss until all ingredients are evenly coated.
  • Taste and adjust seasoning if necessary, adding more lime juice or salt as desired.
  • Cover the bowl and chill in the refrigerator for at least 30 minutes to allow flavors to meld.
  • Before serving, stir the salad well and garnish with fresh cilantro.

Notes

Consider serving this salad on a bed of lettuce, or using it as a filling for tacos or wraps. For autumn, add diced apples or cranberries; for summer, enhance with fresh herbs like dill or mint.
