Ingredients
  

  • 4 pieces small chicken breasts (skinless and boneless)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 6 ounces cream cheese
  • 2 tablespoons cream cheese
  • cup grated parmesan cheese
  • cup crumbled feta cheese
  • 1 cup baby spinach chopped
  • ¼ cup sun-dried tomatoes packed in oil
  • 1 tablespoon butter

Instructions
 

  • Butterfly the chicken breasts by slicing them horizontally without cutting all the way through.
  • Season the outside of the chicken with salt, black pepper, and smoked paprika.
  • In a bowl, combine cream cheese, parmesan, feta, spinach, and sun-dried tomatoes. Mix until well blended.
  • Stuff the chicken breasts with the cheese mixture, being careful not to overstuff.
  • Secure the stuffed chicken with toothpicks to keep the filling intact.
  • Heat butter in a skillet over medium heat. Brown the stuffed chicken for about 4-5 minutes on each side until golden.
  • Check that the internal temperature reaches 165°F. Remove from the skillet and let rest before serving.
