Ingredients

  • Wontons: 12-16 pieces store-bought or homemade
  • Chicken Broth: 4 cups low-sodium recommended
  • Bok Choy: 2 cups chopped
  • Carrots: 1 medium thinly sliced or julienned
  • Mushrooms: 1 cup sliced (shiitake or button mushrooms)
  • Garlic: 2 cloves minced
  • Ginger: 1 tablespoon freshly grated
  • Green Onions: 2 chopped (for garnish)
  • Soy Sauce: 1 tablespoon optional, for added flavor

Optional protein:

  • Chicken: 1 cup cooked and shredded (or shrimp/tofu)

Instructions

Prepare the Broth

  • In a large pot, combine the chicken broth, garlic, and ginger. Bring it to a gentle simmer over medium heat. Allow the flavors to meld together for about 5-7 minutes.

Cook the Wontons

  • Gently drop the wontons into the simmering broth. Let them cook for 4-5 minutes or until they float to the top. If you're using frozen wontons, they might need an extra minute or two.

Add the Vegetables

  • Once the wontons are cooked, add the chopped bok choy, carrots, and mushrooms to the pot. Let everything simmer for another 3-4 minutes until the vegetables are tender but still slightly crisp.

Optional Protein

  • If you're adding chicken, shrimp, or tofu, now's the time. Simply stir in the protein and let it heat through for another 2-3 minutes.

Final Seasoning

  • Taste your soup and adjust the seasoning if needed. If you like a bit more depth, add a splash of soy sauce to enhance the umami flavor.

Garnish and Serve

  • Ladle the soup into bowls and garnish with chopped green onions. Serve it hot and enjoy the comforting warmth of this hearty soup!
