  • 4 slices slices of bread (your choice) Use thicker or artisanal bread for better texture.
  • 1 cup fresh spinach, chopped Chop the spinach finely for better distribution.
  • 1/2 cup sun-dried tomatoes, packed in oil and chopped Ensure they are well-drained before chopping.
  • 1 cup ricotta cheese Let sit at room temperature for creamier texture.
  • 1 cup shredded mozzarella cheese For gooey texture, mix with ricotta.
  • 2 tablespoons olive oil or butter Use olive oil for a healthier option or butter for richness.
  • Salt and pepper to taste Adjust seasoning to personal preference.

Preparation

  • In a mixing bowl, combine the ricotta cheese, chopped sun-dried tomatoes, and spinach. Stir until well mixed. Season with salt and pepper to taste.

Cooking

  • Heat a skillet over medium heat and add 1 tablespoon of olive oil or butter.
  • Spread half of the ricotta mixture on two slices of bread, topping with some shredded mozzarella cheese.
  • Place the other two slices of bread on top to form sandwiches.
  • Place the sandwiches in the hot skillet and cook for about 3-4 minutes, or until the bread turns golden brown.
  • Carefully flip the sandwiches and add remaining olive oil or butter to the skillet.
  • Cook for an additional 3-4 minutes, ensuring the cheese melts thoroughly and the bread is golden brown on both sides.
  • Remove from the skillet and let rest for a minute before slicing.
