navel oranges, thinly sliced (plus extra for garnish)

fresh orange juice (about 2 oranges)

Instructions
Preheat your oven to 400°F (200°C) and lightly grease a roasting pan with olive oil.
Season chicken thighs with salt, pepper, and paprika. Place them in the roasting pan on top of the orange slices.
In a bowl, whisk together fresh orange juice, soy sauce, honey, and minced garlic. Pour this marinade over the chicken.
Sprinkle fresh thyme leaves over the chicken, then roast for about 25 minutes.
Turn on the broiler for the last 3-5 minutes to caramelize the skin until golden brown.
Remove from the oven and let the chicken rest for 5 minutes. Garnish with fresh orange slices and thyme before serving.
