Sweet and Savory Roasted Orange Chicken

Ingredients
  

  • 4 pieces bone-in, skin-on chicken thighs (or substitute with drumsticks or breasts)
  • 2 large navel oranges, thinly sliced (plus extra for garnish)
  • ½ cup fresh orange juice (about 2 oranges)
  • 2 Tbsp soy sauce
  • 2 Tbsp honey
  • 1 Tbsp olive oil
  • 3 cloves garlic, minced
  • 1 Tbsp fresh thyme leaves (or 1 tsp dried thyme)
  • 1 tsp paprika
  • to taste salt and pepper
  • to taste fresh thyme sprigs, for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C) and lightly grease a roasting pan with olive oil.
  • Season chicken thighs with salt, pepper, and paprika. Place them in the roasting pan on top of the orange slices.
  • In a bowl, whisk together fresh orange juice, soy sauce, honey, and minced garlic. Pour this marinade over the chicken.
  • Sprinkle fresh thyme leaves over the chicken, then roast for about 25 minutes.
  • Turn on the broiler for the last 3-5 minutes to caramelize the skin until golden brown.
  • Remove from the oven and let the chicken rest for 5 minutes. Garnish with fresh orange slices and thyme before serving.
