Instructions
Preheat your oven to 400°F (200°C).
Season the chicken chunks with salt and pepper.
In a resealable bag, coat the chicken with cornstarch. Dip the coated chicken into the beaten eggs.
In a skillet, heat oil over high heat and sauté the chicken pieces until golden and crispy, about 1 minute per side.
Transfer the chicken to a baking dish and bake for 12-15 minutes until cooked through.
Sauté the bell peppers and onion in the same skillet for 2-3 minutes until slightly tender. Add the pineapple chunks and cook for another minute.
In a bowl, mix sugar, ketchup, vinegar, soy sauce, garlic salt, and cornstarch until well blended.
Pour the sauce into the skillet with the vegetables, stirring until thickened.
Combine the chicken with the sauce and vegetables, then serve immediately over hot cooked rice.
