Ingredients
  

  • 4 pieces boneless skinless chicken breasts cut into 1-inch chunks
  • to taste salt and freshly ground black pepper
  • 1 cup cornstarch
  • 3 large eggs beaten
  • ¼ cup oil (vegetable or canola)
  • 1 cup pineapple chunks
  • 5-6 cups hot cooked rice
  • 1 cup granulated sugar
  • ½ cup ketchup
  • 1 cup apple cider vinegar or rice vinegar
  • 2 tablespoons low-sodium soy sauce
  • 2 teaspoons garlic salt
  • tablespoons cornstarch

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Season the chicken chunks with salt and pepper.
  • In a resealable bag, coat the chicken with cornstarch. Dip the coated chicken into the beaten eggs.
  • In a skillet, heat oil over high heat and sauté the chicken pieces until golden and crispy, about 1 minute per side.
  • Transfer the chicken to a baking dish and bake for 12-15 minutes until cooked through.
  • Sauté the bell peppers and onion in the same skillet for 2-3 minutes until slightly tender. Add the pineapple chunks and cook for another minute.
  • In a bowl, mix sugar, ketchup, vinegar, soy sauce, garlic salt, and cornstarch until well blended.
  • Pour the sauce into the skillet with the vegetables, stirring until thickened.
  • Combine the chicken with the sauce and vegetables, then serve immediately over hot cooked rice.
