Ingredients
  

For the Chicken

  • 1 pound boneless chicken breast, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 cup cornstarch
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko for extra crunch)
  • Vegetable oil, for frying

For the Sauce

  • 1 cup pineapple chunks (fresh or canned)
  • 1 piece bell pepper, chopped
  • 1 piece onion, chopped
  • 1 cup sugar
  • 1/2 cup apple cider vinegar
  • 1/4 cup soy sauce
  • 2 tablespoons ketchup
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Instructions
 

Preparation

  • Season the chicken pieces with salt and pepper, ensuring they’re evenly coated.
  • Set up a breading station: place the cornstarch in one bowl, the beaten eggs in another, and the breadcrumbs in a third bowl.
  • Dredge each piece of chicken in cornstarch, shaking off the excess, then dip it in the beaten eggs, and finally coat it in breadcrumbs, pressing lightly to adhere.

Cooking

  • Heat about an inch of vegetable oil in a large pan over medium heat until hot.
  • Fry the chicken pieces in batches until golden brown and cooked through, approximately 3-4 minutes per side. Remove them from the oil and drain on paper towels.
  • In another pan, combine pineapple chunks, bell pepper, and onion, sautéing them over medium heat until the vegetables soften.
  • In a bowl, mix sugar, apple cider vinegar, soy sauce, and ketchup; add this mixture to the pan with the vegetables. Stir well and let it simmer for about 5 minutes.
  • Add the cornstarch-water mixture to the sauce, stirring constantly until it thickens slightly.
  • Add the fried chicken to the sauce, tossing to coat evenly before serving.

Notes

Garnish with sesame seeds or chopped green onions. Serve with steamed jasmine rice or a fresh salad. For a healthier option, consider baking the chicken.
