Marinade ingredients

  • 1 pound chicken thighs or breasts, cut into bite-sized pieces Chicken thighs are juicier.
  • 1 cup sweet chili sauce Choose high-quality sweet chili sauce for best flavor.
  • 2 tablespoons soy sauce Substitute with tamari for gluten-free.
  • 1 tablespoon minced garlic
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water For mixing cornstarch.
  • 1 teaspoon sesame oil (optional) For extra flavor.

For garnish

  • to taste chopped green onions Use for garnishing.
  • to taste sesame seeds Use for garnishing.

Instructions
 

Marinade

  • In a bowl, mix the sweet chili sauce, soy sauce, minced garlic, ginger, and sesame oil.
  • Add the chicken pieces and toss to coat.
  • Let it marinate for at least 30 minutes, or longer for more flavor.

Cooking

  • Heat vegetable oil in a large skillet over medium-high heat.
  • Add the marinated chicken pieces, shaking off excess sauce.
  • Cook for about 5-7 minutes, stirring occasionally, until golden brown and cooked through.
  • Ensure the internal temperature reaches 165°F.

Thickening sauce

  • Mix cornstarch with water in a small bowl until smooth.
  • Once the chicken is cooked, pour the remaining marinade into the skillet along with the cornstarch mixture.
  • Stir to combine and allow to simmer for about 2-3 minutes until the sauce thickens.

Serving

  • Transfer the sweet chili chicken to a platter.
  • Garnish with chopped green onions and sesame seeds.

Notes
