Ingredients
  

For the Chicken and Sauce

  • 1 pound chicken breast, cut into bite-sized pieces Use fresh cuts for better flavor.
  • 2 tablespoons olive oil
  • 1/2 cup sweet chili sauce Adjust according to your spice preference.

For the Vegetables

  • 1 cup red bell pepper, diced
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1 cup snap peas

For the Base

  • 2 cups cooked rice (jasmine or brown) Prepare according to package instructions.

Cooking the Chicken and Vegetables

  • Heat olive oil in a large skillet over medium-high heat.
  • Season the chicken pieces with salt and pepper, then add them to the skillet. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  • Add the diced red bell pepper, broccoli florets, sliced carrots, and snap peas to the skillet. Stir-fry the vegetables for about 4-5 minutes, or until they are tender but still crisp.
  • Pour sweet chili sauce over the chicken and vegetables, mixing well to coat everything evenly. Let it simmer for a few minutes so the flavors meld together.

Assembling the Bowl

  • Assemble the bowls by placing cooked rice at the bottom. Top with the sweet chili chicken mixture.
  • Garnish each bowl with sliced green onions and sesame seeds before serving.
