Ingredients
  

For the Chicken

  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces Thighs are more flavorful and moist.
  • 1/3 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 clove garlic, minced

For the Rice and Sauce

  • 1 cup jasmine or basmati rice, cooked Follow package instructions for cooking.
  • 1/2 cup full-fat coconut milk
  • 2 tablespoons lime juice, freshly squeezed
  • 1 tablespoon honey Adjust for sweetness preference.
  • Pinch salt

For the Vegetables

  • 1/2 cup shredded carrots
  • 1/2 cup thinly sliced cucumbers

For Garnish

  • 1 tablespoon sesame seeds Adds crunch.
  • 2 tablespoons fresh cilantro, chopped Garnish for a fresh flavor.

Instructions
 

Marinate the Chicken

  • In a mixing bowl, combine sweet chili sauce, soy sauce, and minced garlic. Stir until well blended.
  • Add the chicken pieces to the marinade and coat well. Allow to marinate for about 10 minutes.

Prepare the Rice

  • Cook the jasmine or basmati rice according to package instructions and set aside.

Make the Coconut Lime Sauce

  • In a separate bowl, whisk together coconut milk, lime juice, honey, and a pinch of salt. Taste and adjust as needed.

Cook the Chicken

  • Heat a bit of oil in a skillet over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes until caramelized and cooked through.

Prepare the Vegetables

  • Slice the bell pepper, shred the carrots, and thinly slice the cucumbers.

Assemble the Bowl

  • Place a scoop of rice in a bowl, top with chicken pieces, and arrange the fresh vegetables on top.
  • Drizzle the coconut lime sauce over the bowl and garnish with sesame seeds and cilantro.

Serve

  • Consider adding lime wedges on the side for an extra burst of flavor.

Notes
