  • 2 lb chicken chunks (white or dark meat) You can opt for either a combination of both.
  • 1 cup pineapple juice
  • 1/4 cup brown sugar, firmly packed
  • 1/3 cup soy sauce Using low sodium is a great choice.
  • 1 medium can pineapple chunks
  • 1 small onion, chopped
  • 1 medium green pepper, cut into chunks

Preparation

  • Start by cutting the chicken into bite-sized chunks.
  • In a bowl, combine the pineapple juice, brown sugar, and soy sauce, mixing until the brown sugar dissolves.
  • Place the chicken chunks in the crockpot, laying them out evenly.
  • Add the chopped onion and green pepper over the chicken.
  • Top with the can of pineapple chunks, including the syrup.
  • Pour the sauce mixture evenly over all the ingredients.

Cooking

  • Cover the crockpot and cook on low for 5-6 hours or on high for 2-3 hours.
  • Once done, gently stir the mixture to coat the chicken and vegetables with the sauce.

Notes

For added flavor, consider marinating chicken in the sauce overnight. For a fresher taste, use fresh pineapple. Adjust sweetness by reducing brown sugar, and add more vegetables if desired.
