  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground ginger

  • 2 tablespoons cornstarch
  • 2 tablespoons water To mix for thickening sauce.

Preparation

  • Layer the Chicken: Start by placing the chicken breasts at the bottom of your slow cooker, laying them flat.
  • Create the Sauce: In a small bowl, mix together the pineapple juice, brown sugar, soy sauce, crushed pineapple, garlic, ginger, salt, and pepper until well combined.
  • Combine: Pour the sauce over the chicken breasts, ensuring they are evenly coated.
  • Cook: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
  • Thicken the Sauce: After cooking, remove the chicken and whisk cornstarch with water in a bowl. Stir into the sauce and cook on high for an additional 10 to 15 minutes.
  • Final Touches: Return the chicken to the crockpot and let it soak in the sauce for a few minutes before serving over rice or noodles, garnished with green onions and sesame seeds.
