Main Ingredients

  • 2 pounds boneless, skinless chicken thighs Chicken thighs work best for flavor and tenderness.
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/3 cup brown sugar
  • 2 teaspoons garlic, minced
  • 1 teaspoon ginger, minced
  • 1 medium bell pepper, cut into chunks Adds color and crunch.
  • 1 cup pineapple chunks Fresh or canned.
  • 2 tablespoons cornstarch For thickening the sauce.
  • 2 tablespoons water For cornstarch slurry.
  • to taste sesame seeds for garnish
  • to taste sliced green onions for garnish

Instructions
 

Preparation

  • Combine pineapple juice, soy sauce, brown sugar, garlic, and ginger in the slow cooker and stir until well mixed.
  • Add chicken thighs to the sauce, ensuring they are coated.
  • Cover and cook on low for about five hours.

Adding Vegetables

  • In the last 30 minutes of cooking, add bell pepper and pineapple chunks.

Thickening the Sauce

  • Mix cornstarch and water in a bowl to create a slurry, then stir it into the slow cooker.
  • Increase heat to high and cook for an additional 20-30 minutes until the sauce thickens.

Serving

  • Serve hot, garnished with sesame seeds and green onions over rice or salad.

Notes
