Sweet Potato Bisque

Ingredients
  

Soup Base

  • 4 medium sweet potatoes, peeled and diced Choose firm sweet potatoes for best flavor.
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated For added warmth and flavor.
  • 4 cups vegetable broth Or chicken broth for deeper flavor.
  • 1 can coconut milk (14 oz)

Spices

  • 1 teaspoon ground cumin
  • 1 teaspoon ground nutmeg
  • to taste Salt and pepper

For Cooking

  • 2 tablespoons olive oil Use for sautéing.
  • 1 handful Fresh herbs for garnish Such as cilantro or parsley.

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onions and sauté until they become translucent, about 5-7 minutes.
  • Stir in the minced garlic and grated ginger. Cook for another minute until fragrant.
  • Add the diced sweet potatoes to the pot, followed by the ground cumin and nutmeg. Stir to combine.

Cooking

  • Pour in the vegetable broth and bring to a boil.
  • Reduce the heat to low and let it simmer for about 20 minutes, or until the sweet potatoes are tender.
  • Remove from heat and use an immersion blender to puree the soup until smooth and creamy.
  • Return the bisque to the pot and stir in the coconut milk. Heat it through over low heat, seasoning with salt and pepper to taste.
  • Allow to heat for about 5 minutes, stirring occasionally.
  • Serve hot, garnished with fresh herbs.

Notes

For a richer flavor, let the bisque simmer a bit longer after adding the coconut milk. Adjust spices according to preference, adding a pinch of cayenne for heat.
