Vegetables

  • 2 large sweet potatoes, peeled and cubed
  • 1 medium head of cauliflower, chopped into florets
  • 1 medium onion, diced
  • 2 cloves garlic, minced

Liquids

  • 4 cups vegetable broth
  • 1 cup coconut milk (or any creamy alternative)

Oils and Spices

  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste

Garnish

  • Fresh herbs for garnish (like cilantro or parsley)

Preparation

  • Heat the olive oil in a large pot over medium heat. Add the diced onions and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic, ground cumin, and paprika. Cook for an additional 1-2 minutes until fragrant.
  • Add the chopped cauliflower and sweet potato cubes, stirring well to combine.

Cooking

  • Pour in the vegetable broth, ensuring it covers all the vegetables. Bring to a boil, then reduce heat and simmer, covered, for 20-25 minutes or until tender.
  • Remove from heat and puree the soup until smooth using an immersion blender or in batches with a traditional blender.
  • Return the blended soup to the pot and stir in the coconut milk. Heat on low for about 5 minutes, adjusting consistency with more broth as needed. Season to taste with salt and pepper.

Serving

  • Serve hot, garnished with fresh herbs if desired.
