  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 3 cups vegetable broth
  • Salt and black pepper to taste

Instructions
 

Preparation

  • Warm up a large pot over medium heat and pour in the olive oil.
  • Add the chopped onion and cook for about 3 to 4 minutes until soft and translucent.
  • Add the minced garlic and chopped red bell pepper, sauté for an additional 2 to 3 minutes.
  • Introduce the diced sweet potatoes along with the chili powder, ground cumin, smoked paprika, salt, and black pepper. Mix for about 2 minutes until the sweet potatoes are well-coated.

Cooking

  • Pour in the diced tomatoes, black beans, kidney beans, and vegetable broth.
  • Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for 30 to 35 minutes, stirring occasionally.
  • Taste and adjust the seasoning as needed before serving.

Notes
