  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup breadcrumbs (preferably whole wheat)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 large egg
  • 2 tablespoons olive oil or melted coconut oil
  • Fresh herbs for garnish (like parsley or chives)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  • Boil or steam the sweet potato cubes in a pot of water until soft, about 15-20 minutes, then drain and let cool slightly.
  • Mash the sweet potatoes in a mixing bowl until smooth.
  • Add breadcrumbs, Parmesan cheese (if using), garlic powder, onion powder, smoked paprika, salt, and pepper to the mashed sweet potatoes and mix well.
  • In a separate bowl, beat the egg and stir it into the sweet potato mixture until fully incorporated.
  • Form the mixture into small nugget shapes and place them onto the prepared baking sheet.
  • Brush the tops of the nuggets with olive oil or melted coconut oil for extra crispiness.

Baking

  • Bake in the preheated oven for about 20-25 minutes, flipping them halfway through until golden brown.
  • Remove from the oven and let cool slightly before serving. Garnish with fresh herbs if desired.

Notes

For a crispy texture, ensure not to overcrowd the baking sheet and consider double-breading your nuggets for added crunch. Feel free to experiment with different spices and vegetable additions.
