Instructions
Preheat the oven to 375°F (190°C).
In a large pot, bring water to a boil and cook the elbow macaroni until al dente. Drain and set aside.
In a medium saucepan, melt the butter over medium heat. Whisk in the flour to create a roux and cook for about a minute.
Slowly whisk in the milk, stirring until thickened enough to coat the back of a spoon.
Add the shredded cheddar and mozzarella cheeses, stirring until melted and smooth.
In a large bowl, combine the cooked macaroni, cheese sauce, diced chicken, honey, cracked black pepper, salt, and paprika (if using).
Transfer the mixture to a greased baking dish and top with breadcrumbs if desired.
Bake for 25-30 minutes until the top is golden brown and bubbly.
Let sit for a few minutes before serving. Enjoy!
