Instructions
Heat a skillet over medium-high heat. Add ground beef and cook for about 8 minutes, breaking it apart as it browns.
While the beef cooks, whisk together brown sugar, ginger, garlic, mirin, soy sauce, vinegar, broth, and cornstarch in a bowl.
Once the beef is browned, drain excess fat if necessary. Add scallions, bell pepper, and carrots to the skillet and cook for 3 minutes.
Pour the sauce over the beef and vegetables. Stir well and cook for an additional 3 minutes, or until the sauce thickens slightly.
Taste and adjust seasoning with salt and pepper. Serve hot over rice or noodles, garnished with sesame seeds or scallions if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove.
