Stuffed Peppers

  • 4 large large bell peppers (any color) Choose fresh, ripe bell peppers for the best flavor.

Filling

  • 1 pound boneless, skinless chicken breast Consider marinating in teriyaki sauce for extra flavor.
  • 1 cup cooked rice (white or brown) Can also use quinoa or cauliflower rice.
  • 1 cup fresh pineapple chunks Add more for a sweeter filling if desired.
  • ½ cup teriyaki sauce Use your favorite brand.
  • 1 small onion, diced Helps build the flavor base.
  • 2 cloves garlic, minced For added aroma and flavor.
  • 1 tablespoon olive oil For sautéing.
  • ½ teaspoon ground ginger Enhances the dish's flavor profile.
  • 1 teaspoon sesame oil Adds a nutty flavor.
  • to taste Salt and pepper Season according to preference.
  • Chopped green onions for garnish Adds freshness.
  • Sesame seeds for garnish (optional) For an extra touch.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice the tops off the bell peppers and remove the seeds and membranes. Arrange them upright in a baking dish.

Cooking

  • Heat olive oil in a skillet over medium heat. Add the diced onion and garlic, sautéing until soft and fragrant.
  • Cut the chicken into small pieces and add them to the skillet. Cook until the chicken is no longer pink.
  • Stir in the cooked rice, pineapple chunks, teriyaki sauce, ground ginger, and sesame oil. Cook for an additional 3-4 minutes, allowing the flavors to meld.
  • Season the mixture with salt and pepper to taste.
  • Fill each bell pepper with the chicken and rice mixture, packing it down slightly.
  • Cover the baking dish with aluminum foil and bake for 25-30 minutes.
  • Remove the foil and bake for an additional 10 minutes to slightly brown the tops.
