  • 4 cups thinly sliced green cabbage Fresh and crisp
  • 1 cup diced tomatoes
  • 1 cup cooked black beans, drained and rinsed Canned or cooked from scratch
  • 1 cup corn, fresh or frozen If frozen, thaw completely
  • 1 small red onion, diced
  • 1 medium bell pepper, diced (any color)
  • 1 each avocado, diced Use ripe but firm avocados
  • 1/4 cup fresh cilantro, chopped

Dressing Ingredients

  • 1 each lime, juiced Freshly squeezed for best flavor
  • 1/3 cup olive oil
  • 1 tablespoon chili powder Adjust to taste
  • to taste Salt and pepper Add as desired

Preparation

  • Begin by slicing the green cabbage into thin strips. Place them in a large mixing bowl.
  • Add the diced tomatoes, black beans, corn, diced red onion, and bell pepper to the bowl with the cabbage. Toss the ingredients together gently until well combined.
  • In a separate small bowl, whisk together the lime juice, olive oil, chili powder, salt, and pepper. Mix until well blended.
  • Pour the dressing over the salad mixture and toss until everything is evenly coated.
  • Gently fold in the diced avocado and chopped cilantro. Serve immediately or let it marinate for a few minutes to enhance the flavors.
