  • 2 shallots, finely chopped
  • 1/4 cup dried mini shrimp
  • 1 tsp dried chili flakes
  • 1/3 cup palm sugar
  • 1 chili, sliced
  • 1/4 cup water
  • 1 tsp shrimp paste
  • 1/2 tbsp fish sauce

Preparation

  • Prepare all your ingredients to ensure a smooth cooking process.

Cooking

  • Heat a cooking pot over medium heat.
  • Pour in 1/4 cup of water, 1/3 cup of palm sugar, 1 tsp of shrimp paste, and 1/2 tbsp of fish sauce into the pot. Stir gently to dissolve the palm sugar.
  • Add the shallots, sliced chili, dried mini shrimp, and dried chili flakes. Stir to combine.
  • Cover the pot and let it boil for about five minutes to allow the flavors to meld.
  • Turn off the heat and carefully transfer the sauce into a serving cup.
  • While the sauce cools, peel and slice ripe green mangoes thinly, and place them in cold water to keep fresh.

Serving

  • Arrange the mango slices on a platter next to the Thai Mango Dipping Sauce.
