Ingredients
  

Main Ingredients

  • 1.5 tablespoons cornstarch For thickening the sauce.
  • 1.25 cups water Divided into two parts.
  • 0.5 cup granulated white sugar
  • 2 teaspoons minced garlic Fresh for best flavor.
  • 2 teaspoons red pepper flakes Adjust to taste for spiciness.
  • 0.25 cup rice vinegar Can be substituted with apple cider vinegar.
  • 0.5 teaspoon salt
  • 1 tablespoon tomato ketchup
  • 2 teaspoons sambal oelek Or red chili paste or Sriracha.
  • 1 tablespoon fish sauce Can be substituted with soy sauce for a vegan option.

Preparation

  • Create a cornstarch slurry by mixing cornstarch with ¼ cup of water in a small bowl until smooth.

Cooking

  • In a saucepan, combine sugar, garlic, red pepper flakes, the remaining 1 cup of water, rice vinegar, salt, ketchup, sambal oelek, and fish sauce. Stir to blend well.
  • Place the saucepan over medium heat and stir frequently until the mixture begins to gently boil.
  • Add the cornstarch slurry while stirring continuously to avoid clumps.
  • Continue cooking for 2-3 minutes while stirring, until the sauce thickens to a smooth, glossy consistency.
  • Remove from heat and let cool slightly before transferring to a glass jar or airtight container.

Notes

Store in an airtight container in the refrigerator for up to two weeks. For longer storage, freeze in ice cube trays.
