Ingredients
  

Main Ingredients

  • 2 lbs ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 each green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth
  • 2 cans (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 2-3 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper (optional)
  • Salt and black pepper, to taste

Toppings

  • Shredded cheese
  • Sour cream
  • Green onions
  • Avocado slices
  • Tortilla chips (optional)

Instructions
 

Preparation

  • Chop the onion, bell pepper, and garlic, and have your canned ingredients ready.

Cooking

  • In a large pot, brown the ground beef (or turkey) over medium heat until no longer pink, then drain excess fat.
  • Add diced onion and green bell pepper to the pot. Sauté until softened, about 4-5 minutes.
  • Add minced garlic and cook for another minute.
  • Stir in chili powder, cumin, paprika, and optional cayenne pepper, mixing well.
  • Add diced tomatoes and tomato sauce; stir to combine.
  • Pour in beef broth and bring to a boil. Reduce heat and let it simmer for 30-40 minutes.
  • Add drained kidney and pinto beans; cook for another 10 minutes.
  • Taste and adjust seasoning with salt and black pepper, then serve hot.
