Ingredients
  

Main Ingredients

  • 2 lbs ground beef or ground turkey Choose based on your preference for a hearty or lighter option.
  • 1 small onion, diced
  • 1 whole green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed

Spices

  • 2-3 tblsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper (optional) Adjust based on heat preference.
  • to taste Salt and black pepper Season to your liking.

Toppings

  • to taste shredded cheese Sharp cheddar is recommended.
  • to taste sour cream
  • to taste green onions, sliced
  • to taste avocado slices
  • to taste tortilla chips Optional for serving.

Instructions
 

Preparation

  • Gather all ingredients and prepare by dicing the onion and green bell pepper, and mincing the garlic.

Cooking

  • In a large pot or Dutch oven, heat a splash of oil over medium-high heat and add the ground meat.
  • Cook the meat until browned, about 5 to 7 minutes, breaking it down with a spoon.
  • Add the diced onion and bell pepper, sauté for around 5 minutes.
  • Stir in the minced garlic and cook for one more minute.
  • Season with salt, black pepper, chili powder, cumin, and paprika, mixing well.
  • Pour in the diced tomatoes with juices, tomato sauce, and beef broth, stirring to combine.
  • Bring the mixture to a gentle boil, then reduce heat to low and simmer for at least 30 minutes.
  • Add the kidney beans and pinto beans, and cook for an additional 10 to 15 minutes.
  • Taste and adjust the seasonings if necessary before serving.

Serving

  • Ladle the chili into bowls and add desired toppings like cheese, sour cream, green onions, avocado, and tortilla chips.
