Ingredients

water or milk

espresso or brewed coffee
a pinch
salt

rolled oats, quick-cooking
1/2

pure vanilla extract

mascarpone

vanilla yogurt

honey or maple syrup (optional)

homemade Nutella or chocolate spread
as needed
unsweetened cocoa or cacao (for dusting)
as needed
dark chocolate shavings or cacao nibs (optional)
Instructions
In a medium pot, combine water or milk, salt, and espresso or coffee. Bring to a gentle boil over medium heat.
Reduce heat to medium-low and add the rolled oats. Cook for 5-7 minutes, stirring occasionally until thickened.
Remove from heat and stir in vanilla extract.
In a separate bowl, mix mascarpone and yogurt, adding honey or maple syrup if desired.
Scoop the oatmeal into bowls, drizzle with chocolate spread, and dollop with the mascarpone-yogurt mixture.
Dust with cocoa powder and add chocolate shavings or cacao nibs if using. Serve warm.
