Tiramisu Oatmeal

A delicious oatmeal dish that captures the flavors of tiramisu, featuring espresso, mascarpone, and chocolate!

Ingredients
  

  • 3/4 cup water or milk
  • 1/4 cup espresso or brewed coffee
  • a pinch salt
  • 1/2 cup rolled oats, quick-cooking
  • 1/2 tsp pure vanilla extract
  • 2 Tbsp mascarpone
  • 1/3 cup vanilla yogurt
  • 1 tsp honey or maple syrup (optional)
  • 1-2 Tbsp homemade Nutella or chocolate spread
  • as needed unsweetened cocoa or cacao (for dusting)
  • as needed dark chocolate shavings or cacao nibs (optional)

Instructions
 

  • In a medium pot, combine water or milk, salt, and espresso or coffee. Bring to a gentle boil over medium heat.
  • Reduce heat to medium-low and add the rolled oats. Cook for 5-7 minutes, stirring occasionally until thickened.
  • Remove from heat and stir in vanilla extract.
  • In a separate bowl, mix mascarpone and yogurt, adding honey or maple syrup if desired.
  • Scoop the oatmeal into bowls, drizzle with chocolate spread, and dollop with the mascarpone-yogurt mixture.
  • Dust with cocoa powder and add chocolate shavings or cacao nibs if using. Serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat and add toppings before serving.
