  • 1 teaspoon Sugar (optional) Can help balance acidity.
  • 1/4 cup Parmesan cheese (optional, for serving) Grated.
  • 1 tablespoon Balsamic vinegar (optional, for drizzling) Enhances the dish.

Instructions
 

Preparation

  • Start by selecting fresh tomatoes. Rinse them under cold water and pat dry. If using larger tomatoes, core and chop them into smaller pieces. For cherry or grape tomatoes, slice them in half.
  • Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Stir in minced garlic and cook for an additional minute until fragrant, being careful not to let it burn.
  • Add the chopped tomatoes to the skillet. Season with salt, pepper, and a pinch of sugar if desired.

Cooking

  • Cook the mixture for about 10-15 minutes, stirring occasionally, until the tomatoes break down and the flavors meld together.
  • Stir in fresh herbs during the last few minutes of cooking.
  • Taste and adjust the seasoning as necessary. Serve warm with grated Parmesan cheese on top, if desired.
