Ingredients
  

  • 1 package cheese tortellini
  • 4 cups chicken broth or vegetable broth for a vegetarian option
  • 1 cup heavy cream can substitute with half-and-half for a lighter option
  • 1 cup frozen spinach can use fresh spinach if preferred
  • 2 medium carrots chopped
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 1 medium onion diced
  • ½ cup parmesan cheese for garnish
  • 1 tsp dried basil
  • ½ tsp oregano
  • to taste salt and pepper

Instructions
 

  • Chop the carrots, celery, onion, and garlic. The smaller the chop, the quicker they’ll cook.
  • Add all the ingredients into the crockpot, including the chicken broth, heavy cream, spinach, and tortellini. Stir to combine.
  • Season with basil, oregano, salt, and pepper, then stir to distribute the seasonings evenly.
  • Cover and cook on low for 3-4 hours, or until the vegetables are tender and the tortellini is cooked through.
  • 15 minutes before serving, stir in the parmesan cheese to melt into the soup.
  • Serve hot and enjoy!

Notes

This soup freezes wonderfully, so make a big batch and enjoy it later on busy days!
