cheese tortellini
4
cups
chicken broth
or vegetable broth for a vegetarian option

heavy cream
can substitute with half-and-half for a lighter option

frozen spinach
can use fresh spinach if preferred

celery
chopped

parmesan cheese

Instructions
Chop the carrots, celery, onion, and garlic. The smaller the chop, the quicker they’ll cook.
Add all the ingredients into the crockpot, including the chicken broth, heavy cream, spinach, and tortellini. Stir to combine.
Season with basil, oregano, salt, and pepper, then stir to distribute the seasonings evenly.
Cover and cook on low for 3-4 hours, or until the vegetables are tender and the tortellini is cooked through.
15 minutes before serving, stir in the parmesan cheese to melt into the soup.
Serve hot and enjoy!
