Trader Joe's Lobster Casserole

A delightful and easy-to-make casserole combining creamy lobster bisque, tender pasta, and delicious langostino tails, topped with mozzarella cheese.

Ingredients
  

Pasta and Base

  • 1 pound penne pasta
  • 1 block cream cheese (softened)
  • 1 container Trader Joe's lobster bisque
  • 1 package Trader Joe's frozen langostino tails (thawed)
  • 1 cup cherry tomatoes (halved)
  • 0.5 stick butter
  • 3 cloves garlic (minced)
  • 1 cup Kraft creamy mozzarella cheese
  • to taste Salt and pepper
  • 1 Lemon wedge (for garnish)

Instructions
 

Preparation

  • Boil approximately four quarts of lightly salted water in a large pot.
  • Once it reaches a rolling boil, add the penne pasta and cook according to package instructions (about 11 minutes).
  • Drain the pasta and return it to the pot.
  • Mix in the softened cream cheese and lobster bisque over medium-high heat until well combined.
  • Season with salt and pepper to taste, then remove from heat.

Baking

  • Preheat your oven to 350°F (175°C).
  • Place half a stick of butter in a 9x13 inch baking dish and melt it in the preheating oven.
  • Carefully remove the dish and add the thawed langostino tails and minced garlic, tossing until fragrant.
  • Combine the penne mixture and halved cherry tomatoes into the baking dish and mix thoroughly.
  • Sprinkle mozzarella cheese on top and bake for 10 to 15 minutes, or until bubbly and golden.
  • Remove from oven, garnish with lemon juice, and serve.

Notes

For added texture, consider sprinkling breadcrumbs mixed with melted butter on top before baking. Store leftovers in the refrigerator for up to three days.
